Yesterday was our first day to pick up our fruit/vegetable basket from the food co-op that we just joined called Bountiful Baskets. Our goal is to eat everything in that basket before the next Saturday when we pick up the next one. This week the basket had kale in it. The only thing I know to do with kale is make this yummy soup!
(This soup is served at The Olive Garden Restaurants!)
1 lb. Italian sausage (I like mild)
1- 1/2 tsp. red pepper flakes
1 large white onion, diced
4 cloves garlic, minced
4-5 strips bacon, chopped
10 cups water
5 chicken bouillon cubes
4-5 large potatoes, diced
1 cup heavy cream
1/2 bunch of kale, trimmed from stalks and chopped bite size
Brown sausage and red pepper flakes together until sausage is cooked through.
In separate pan, (the one you will make the soup in, fairly large) cook bacon til done then add onions and garlic. Cook til onions are transparent.
To this pot add water and bouillon. Bring to boil.
Add potatoes and cook for thirty minutes, lowering heat to medium until potatoes are tender. Once they are done, add the cream and stir well.
Add sausage, stirring well.
The last step is to add the kale, mixing it all in just before you serve!
