Zucchini Nut Bread


My daughter called this week and asked for this recipe. Her boss had been given a great big zucchini and didn't know what to do with it. Making bead is the perfect plan, and everybody loves it! I got this recipe nearly 40 years ago from a friend in Olympia. Thanks Helen!

Pre-heat oven to 350 degrees.
Mix together in large mixing bowl:
3 eggs, beaten
1 cup vegetable oil
2 1/4 cups sugar
3 tsp vanilla

After mixing, add:
2 cups grated zucchini (the recipe says peeled, but I never do!)

To this mixture, add the dry ingredients:
3 cups flour
1 tsp. salt
3 tsp cinnamon
1/4 tsp baking powder
1 tsp soda

When completely mixed together add:
1 cup chopped walnuts

Pour into two large Pam-sprayed loaf pans. Bake for 1 hour or until toothpick inserted in center comes out clean.
