GARDEN VEGETABLE SOUP

This soup has become a staple around the Wilson household! Jim and I joined Weight Watchers and found this recipe in the booklet they gave us. We do 4 X’s the recipe so we have enough for the whole week! You can add any vegetable you want. Just keep the soup stock the same. We have added celery, kale, chineese cabbage, green beans…whatever we have on hand.
1 spray cooking spray
1/2 cup sliced carrots
1/4 cup diced onion
2 medium garlic cloves, minced
3 cups fat-free chicken broth
1/2 cup diced green cabbage
1/2 cup chopped spinach
2 tsp. canned tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt (I don’t put this is!)
1/2 cup diced zucchini
1/2 cup bell pepper
Spray large saucepan with cooking spray; heat. Saute carrots, onion and garlic over low heat until soft…about 5 minutes. Add broth, cabbage, spinach, tomato paste, basil, oegano and salt; bring to boil. Reduce heat; simmer, covered, about 15 minutes. Stir in zucchini and peppers; cook 3-4 minutes more. Serve hot.
