CRANBERRY MEATBALLS

I attended a Christmas luncheon at my bosses house one year and his wife served these meatballs. I decided to try them out for our family Christmas Eve dinner, and they have become a tradition!

1 – 1/2 lbs. ground beef

1/2 lb. ground sausage (Jimmy Dean regular)

2 eggs, well beaten

2 slices bread, crumbled

1/4 tsp. black pepper

1/2 tsp garlic powder

1 medium onion, chopped

1/3 cup catsup

1/4 cup brown sugar

1 tsp. salt

Combine all ingredients and mix well. Form into balls and arrange in roasting pan.

Sauce:   1 can jellied cranberryt sauce

                3/4 cup chili sauce

                3 T brown sugar, packed

                1 T lemon juice

Combine cranberries, chili sauce, brown sugar and lemon juice. Cook over medium heat, stirring until well blended and cranberry sauce is melted. Pour hot sauce over meatballs. Bake uncovered at 350 degrees for 45 minutes.

Apple Salad

I got this yummy recipe from my friend Ellen. She serves it as least once a year at one of her much loved Luncheon/Teas. I made it for my quilt club Christmas dinner last year and it was a big hit. I just bought all the ingredients to make it for this years Christmas dinner, which is tomorrow night.

Ingredients
15 oz. can crushed pineapple
1/3 cup sugar
small box Lemon Jell-o
8 oz. cream cheese
1 cup diced celery
1 large apple
1/2 to 1 cup chopped walnuts
1 cup+ Cool Whip


In a saucepan boil together the pineapple and sugar.
Remove from heat and stir in the Jell-o til dissolved..about 2 minutes

Mix in celery, apple, and walnuts. (Apples can be peeled or left with the peel on.)

Fold in thawed Cool Whip.

Pour into decorative bowl.
Cover and refrigerate at least 4 hours.

I have used sugar-free jello, fat-free cream cheese and Cool Whip with excellent results.
